Do we really understand how Carbohydrates affect our health?

When I was 10 years old my father was affected by Diabetes. He was 40 years old at that time and this was in 1990. I remember him taking medications ritually for the next 10 years. Not sure if he got any advice to change his diet but he never did. I did not realize how dangerous Diabetes is. He had pain in his left arm in 2001 a few times and Doctor gave pain balm to get rid of the pain. Little did we know that these are precursors of heart disease. On 1st October 2001, my Dad had the final heart attack and he passed away at the age of 51. I was just 20 and I could not easily cope with the loss of my Dad. I became very conscious of the importance of taking care of my health. Internet and WWW were very prominent by then and I also subscribed to WebMD newsletters and mails. Also I read a lot of articles from various websites. From the information I gleaned I started eating vegetables, Fruits and food made from Whole grains. Avoided Oils and fat as much as possible.  The unconscious mind is both dumb and wise. Dumb because some functions of the mind are machine-like. Wise because it is responsible for our ingenious creativity and inspiration.  The ego formed initially to help protect us and to allow differentiation of self from those around us, so in a sense, it almost feels as though we owe it our existence. It continues to exist because conscious perception is limited and finite, and it misses seeing reality correctly. When it reflects on who we are, it cannot properly perceive itself. It would need to see the true potential of our entrie being, but instead it merely holds on to a sliver of who we are and positions this as the entirety of our being. As its hold strengthens, we see how it runs our lives and causes  us misery. The ego grows more powerful and exaggerated when we acknowledge it, when we cater to it or when it protects us during times of adversity. Ultimately, who we are is beyond all of these things.
